I don't really have much of a basis for my opinion, but what is the difference between a modelling amp and an amp with an external modelling pedal?
Therefore my choice would always be an amp + effects as you are not restricted by what the modelling amp has installed, you are free to use what you like!

Good point Olly, however the peavey viper 75 has 40+ preset add the pedal and it has 400 more.

I'm not sure what you would do with 440+ presets!
My only concern would be that you are governed by the quality of the onboard effects unit. So even with an external pedal, are you still being forced to run the sound input through an effects section that may suck tone, sound ultra digital etc.
By having a straight forward amp you have a solid tone to build upon!

I don't like modelling amps. I like proper valve amps. A marshall with hot valves absolutely pisses all over any digital recreation of the same. Honestly, try one if you can.
Those kind of amps are ok for messing around at home, but i'd rather not play one out, and would NEVER record with one

With recording though are you having to crank your tube amp to ridiculously loud volumes?
This is my issue with tube amps - they don't sound fantastic until they are loud - really loud
